Green Beans


  • 1 onion
  • 100 gr. olive oil
  • 1 pc. garlic
  • 1 tbsp. granulated sugar
  • 500 gr. potatoes
  • 1 tbsp. full of tomato paste
  • 50 gr. White Wine
  • lemon zest, from 1 lemon
  • 400 gr. crushed tomatoes
  • 300 gr. water
  • 1 cube of vegetables
  • 1 kg of beans, fresh or frozen
  • 1/3 bunch of mint
  • 2 spring onions
  • 1/3 bunch of parsley
  • salt
  • pepper


Place a saucepan on high heat and add 2 tbsp. olive oil. Cut the onion into thick pieces and put it in the pot. Finely chop the garlic and put it in the pot together with the sugar. Saute until the onion is soft. Peel the potatoes, cut them into pieces and put them in the pot. Add the pulp, quench with the wine, stir and leave until it evaporates. Put the zest from the lemon, the crushed tomato, the water and the cube. Cut the edges of the beans, put them in the pot and stir. Close the lid, lower the heat to medium to low and simmer for 40-50 minutes. Remove from the heat and add the mint, parsley and the green part of the fresh onions that we have chopped, salt, pepper, 80 gr. olive oil, stir and serve.
