Olive Oil cake with Orange Syrup


For the cake

  • 150 grams of ABEA extra virgin olive oil
  • 400 grams of flour
  • 250 grams of sugar
  • 100 grams of grated walnuts
  • 300 grams of orange juice
  • 1 tablespoon powdered cinnamon cloves
  • 1 tablespoon orange zest
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

For the syrup

  • Juice of 2 oranges
  • 150 gr. of sugar
  • 250 ml. of water
  • peels from one orange


Sift the flour and mix it with the soda, baking powder, cinnamon cloves and orange zest. Blend the oil with the sugar in the mixer until the sugar dissolves. Add the flour with the orange juice, continuing to blend on low speed. Add the walnuts and raisins to the mixture, stop blending and stir by hand. Grease a tall cake tin, pour in the mixture and bake in a medium oven at 170o C for 45-50 minutes. Test if the cake is baked by piercing the cake with a knife. Put the syrup ingredients in a small saucepan and cook for 5 minutes. Pour the hot orange syrup over the cold cake. Garnish with orange peel.
